Recipe for Vegetable Kabobs - instadessert



Ingredients

2 cups cremini mushrooms
1 cup cherry tomatoes
1 red bell pepper, chopped
1 green bell pepper, chopped
1 red onion, chopped
1 zucchini, sliced
1 yellow zucchini, sliced

FOR THE MARINADE
1/4 cup olive oil
3 cloves garlic, pressed
Juice of 1 lemon
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Kosher salt and freshly ground black pepper, to taste

Instructions




Preheat your oven to 400 degrees F.
Combine lemon juice, garlic, olive oil, oregano, basil, salt and pepper in a bowl.
Cut up mushrooms, tomatoes, bell peppers, onion and zucchini into 1 inch pieces, and then place them on to skewers. Place the skewers onto a baking sheet.
Cover skewers with the mix, and allow to marinate for up to 15 minutes.
Place skewers into the oven for 10-12 minutes.
