Recipe for Stuffed Mini Potato Cakes - instadessert



Ingredients

12 washed baby red-skinned potatoes
3 strips of well done, chopped bacon
2 cups low fat sour cream
2 tbls olive oil
5 tbls minced sallions
ground pepper

Directions


To begin, preheat your oven to 400 degrees F.
Slice your potatoes in half, then gently mix them in a small bowl with some olive oil.
Face down, bake the potatoes for 20-25 minutes, and then allow them to cool.
Combine sour cream, bacon bits, pepper, and scallions.
Scoop the middle of the potato out with a small spoon.
Fill your potatoes with sour cream mix, serve, and enjoy!
