Recipe for Chickpea and Feta Salad - instadessert





Ingredients

2 cups canned chickpeas
2 medium garlic cloves, finely minced
2 Tbsp uncooked scallions, thinly sliced
1/2 large sweet red pepper, diced
2 Tbsp fresh parsley, fresh, finely minced
9 large olives, black or green, pitted and chopped
1/2 cups crumbled feta cheese
1 Tbsp olive oil
3 Tbsp fresh lemon juice
1/8 tsp black pepper, freshly ground, or to taste
1 tsp lemon zest

Instructions

Mix chickpeas, garlic, scallions, red pepper, parsley, olives and feta cheese in a bowl.
Then, mix together oil and lemon juice, and pour on top of chickpea mix.
