1 bell pepper, whatever color you desire
4-5 large eggs
1 tbsp olive oil
½ cup Parmesan cheese
salt and pepper
Directions
Cut the pepper in ½ inch rings, removing the seed/center.
Over medium-high heat, heat olive oil on a skillet.
Add the slices of pepper to the skillet, and allow them to saute for up to one minute.
Carefully and slowly crack one egg into each bell pepper ring, then top with a little salt and pepper for taste.
Cook the egg/pepper for 3 minutes, then carefully flip over and cook on the other side.
6Top with Parmesan cheese, serve warm and ENJOY!
