Recipe for Fresh Lentil Soup - instadessert




Ingredients

1 lb rinsed lentils
1 cup chopped tomatoes
2 tbsp olive oil
1 cup chopped onion
1/2 cup chopped carrots
1/2 cup chopped clcery
2 quarts vegetable broth
2 tsp salt
1/2 tsp fresh ground coriander
1/2 tsp freshy grains of paradise
1/2 tsp fresh ground cumin


Directions



In a very large Dutch oven, heat olive oil over medium heat.
Carefully add onions, carrots, celery, and salt. Stir and cook for 6-7 minutes.
Add in the lentils, vegetable broth, coriander, cumin, grains of paradise, and tomatoes to the Dutch oven, then bring the broth to a boil.
Reduce the heat, cover, and allow to simmer to 35-40 minutes.
