Ingredients
6 ounces whole-wheat linguine
1 lb shrimp, peeled and deveined
1 28 ounces can crushed tomatoes
1 ninced garlic clove
1 minced shallot
½ tsp crushed red pepper flakes
1 tsp Italian seasoning
1/2 tsp salt
3 tbsp minced parsley
2 tbsp olive oil
Directions
To begin, sauté shallots, garlic, and pepper flakes for about one minute.
Carefully add tomatoes, salt, and Italian seasoning. Stir briefly then bring to a boil.
Lower your heat, and simmer for 12-15 minutes uncovered.
In a separate boiling pot, cook linguine until tender, and then drain.
Add your cleaned shrimp to the tomato sauce. Cook the shrimp until they turn pink for 5-7 minutes.
Once shrimp are cooked, pour the sauce carefully over the linguine.
Top with minced parsley, serve, and ENJOY!
