Recipe for Pineapple Seared Scallops - instadessert

Ingredients
2 lbs. sea scallops
1 cup diced cucumber
1 cup diced pineapple
2 1/2 tbsp. olive oil
1 tsp. minced jalapeño pepper
3 tbsp. chopped cilantro leaves
1 tbsp chopped red onion
1 juiced lime
2 1/2 tsp. grated lime zest
1/4 tsp salt
1.4 tsp hot sauce
black pepper
Directions
Mix together the lime juice/zest, red onion, cilantro, cucumber, pineapple, salt, and hot sauce in a medium sized bowl.
Clean scallops by gently rinsing them, then carefully pat them dry with a paper towel.
To your taste, season the scallops with salt and pepper.
Over medium-high heat, begin to warm olive oil in a large skillet.
Carefully place the scallops in the skillet. Allow them to cook for 2-3 minutes on each side until golden.
Remove scallops from skillet, and serve warm on a plate with the pineapple salsa.
