4 Cod fillets
400g can of chopped tomatoes
1 chopped onion
1 tsp brown sugar
1 tbsp olive oil

Directions
Heat olive oil in a medium sized frying pan, then slowly add the onion, allowing it to cook until browned (6-8 minutes).
Slowly add the tomatoes, soy sauce, brown sugar, and thyme leave.
Bring this mixture to a boil, allowing it to simmer for up to 5 minutes.
Gentle place the cod fillets into the tomato sauce.
