Ingredients:
2 lbs. skinless, boneless chicken thighs cut into large cubes
1-cup plain Greek yogurt
¼ cup lemon juice
3 tbsp. olive oil
1 tbsp. finely grated fresh ginger
1 tbsp. salt
2 tsp. smoked paprika
2 tsp. hot paprika
2 tsp. freshly minced garlic
1 tsp. black pepper
½ tsp. ground cumin
½ tsp. cayenne pepper
Directions:
To begin, mix the yogurt, oil, and lemon juice in a medium sized bowl.
Add in the ginger, salt, both paprika, garlic, cumin, cayenne, and pepper.
Place all of the chicken into a large Ziploc bag, and then add in the spicy yogurt marinade.
Seal, and place in the refrigerator for 6-8 hours.
Closely thread the chicken on skewers, and then preheat an oiled grill or grill pan to medium-high heat.
Place the skewers on the grill to cook for 3-4 minutes per side, and then set aside to set for 5-6 minutes.
Serve and ENJOY!
